Abstract The quantity and quality of carrageenan produced is influenced by the method extraction solvent. Characterization products necessary to get certain standards so product acceptable consumers both locally internationally. purpose this research was determine solvents that can produce from Kappaphycus alvarezii with best characteristics compare results international in order obtain a standardized carrageenan. showed solvent kappa-carrageenan K. NaOH 0.5 N. Kappa-carrageenan has been able compared FAO, FCC Marine Science Co., Ltd. for parameters : Gel strength, viscosity, sulfate content ash content. Alkali extract modify mu-carrageenan (precursor) into kappa-carrageenan. process uses alkali caused event ion exchange between cations (K + or Na ) ions sulphate sea grass reduced Need do more on characterization include microbiological tests as well shelf life test.
